About A Fictionese Dinner

If you haven’t already, go to Google maps and type in Surinam. And then Vietnam. And then the Caspian Sea. Do you see now where Fictionam is located?

It was over a year ago that I was sitting at the table with the three incredible people who comprise the faculty at the Institute at Derby Street (as they called the house they shared) and we were talking about the eigenvectors of flavors (don’t ask). We talked about creating food from scratch, unbounded by tradition or geography or history. The concept of Fictionam and Fictionese cuisine grew out of that conversation, and I’m delighted to make a full menu out of it for the next dinner party at Chez Néné!

 

About Chez Néné

You love good food, and good company. You want the intimacy of a dinner party with the thoughtful, innovative dishes of a top restaurant. You want to talk to the chef and learn about the techniques and ingredients she used. You want to meet great new people. You want to walk away with a new recipe and maybe a new friend, and maybe even a handmade chocolate truffle for the road. Sounds like you, right?

Join me in my home in San Francisco for an unforgettable meal in an intimate group setting. You get to revel in the awesomeness of food you won’t find anywhere else, and in conversation with smart, thoughtful foodies like you.

I’m a self-taught home cook, with 10 years of experience hosting dinner parties. I have converted people who claim not to like a certain food into loving it. My friends freely confess that my cooking is what keeps them coming around (sigh). But why take my word for it? Check out the Kind Words tab, where people write reviews of my cooking. I haven’t paid them, I assure you. Well, maybe a little. Kidding! Kidding!

Q: Can I bring a friend?
A: Sure. This is first-come, first-served. You can come alone, or with a friend, or with a bunch of friends. You can either make a donation for everyone in your group or have your friends donate separately. If your group is bigger than 6, drop me a line at musictheory at gmail dot com and we’ll work it out!

Q: I’m gluten-free / vegetarian / allergic to something. Will you still feed me?
A: But of course, my dear. You can tell me your restrictions when you sign up. I will honor them and either modify my menu for you or create a substitution for you. If I can’t work around them for a specific meal, I will let you know and we’ll can work something out for next time!

Q: What kind of food do you usually make?
A: My cooking combining ingredients and techniques in new ways; I don’t constrain myself by region. I enjoy using spice blends like vadouvan and ras el hanout (not in the same dish!). I like pairing sweet, spicy and savory flavors: I recently made an orange-and-thyme sauce for ice cream, and a watermelon-basil soup spiked with lemon and black pepper. I cook shredded brussels sprouts with butter, preserved lemon and toasted pine nuts. Veggies never tasted so good. I make a chicken curry with coconut and vadouvan (a South Indian / French spice blend) that my friends love. And, last night, I made comfort food: a melt-in-your-mouth beef chili with chipotle chili for a smoky heat and balsamic vinegar to create a subtle depth of flavor.

Q: I’d like to bring my wine of choice; may I?
A: Since tastes in wine vary so wildly from person to person, please feel free to bring a bottle of your favorite wine. An overly jammy or bombastic wine will interfere with your ability to take in the flavors of the food. But, of course, these are just my humble opinions; I will not judge what you bring to drink. Unless it’s Diet Dr. Pepper. Then I might raise an eyebrow…
